Mission

“Mekong Organics Chef connects organic farmers with chefs and communities to celebrate sustainable, culturally rooted cuisine. We empower chefs to create nutritious, low-waste meals using organic and locally sourced ingredients and produce. By promoting food literacy, circular kitchen practices, and mindful sourcing, we aim to reduce food waste, support rural livelihoods, and inspire climate-resilient food systems across the Mekong and beyond.”

Vision

To become a leading culinary movement that inspires chefs, communities, and consumers to embrace organic, zero-waste cooking rooted in the cultural and ecological richness of the Mekong region and beyond.

The Mekong Organics Chef Program aims to inspire and empower chefs, culinary professionals, and food advocates to champion organic, healthy, and sustainable food systems across the Mekong region and beyond. Through education, collaboration, and creativity, the program connects chefs with smallholder farmers, promotes the use of locally sourced organic ingredients, and fosters a culture of environmentally responsible and healthy-nutritious cuisine. By bridging local small farms and tables, we cultivate a vibrant community of organic and local food ambassadors who celebrate traditional flavours, support rural livelihoods, and contribute to a resilient food future.

We are thrilled to host the first Organic Cooking Activity at Viet Ha Organic Farm in Binh Phuoc Province, showcasing a diverse range of certified organic ingredients from renowned producers across Vietnam. The event will feature organic coconut products from Sokfarm (Tra Vinh) and Green Coco (Ben Tre), organic palm sugar from Palmania (An Giang), organic shrimp from Minh Phu Seafood Corporation (Ca Mau), organic rice from Tan Dat Cooperative (Vinh Long) and Tu Viet Traditioanl Rice (Kien Giang), organic lotus from Van Sen (Vung Tau), organic pepper and coffee from Dalanka Forest Farm, organic vegetables from Viet Ha Farm, and organic fruits from Ech Op Farm (Long Xuyen, An Giang). This initiative celebrates Vietnam’s organic farming community and promotes sustainable, healthy cooking by connecting producers, chefs, and consumers in a meaningful farm-to-table experience.

We offer online training in healthy cooking techniques for a diverse audience, including young people, chefs, and home cooks of all genders and backgrounds. Our program focuses on creating delicious, nutritious meals using organic ingredients sourced directly from local farms. By partnering with organic farmers across the Mekong Region, Southeast Asia, and Australia, we promote sustainable cooking practices and raise consumer awareness about reducing food waste through the preparation of healthy, organic cuisine.

We are seeking support to expand our online-offline training program, which educates young people, chefs, and home cooks on sustainable and healthy cooking practices that help prevent food waste. Our initiative teaches participants how to create nutritious and appealing meals using organic ingredients sourced directly from local farms. By collaborating with organic farmers across the Mekong Region, Southeast Asia, and Australia, we strengthen local food systems and promote the use of seasonal, whole foods. The training also highlights practical strategies to reduce household food waste, including mindful meal planning, utilising leftovers creatively, and understanding food storage and expiration dates. This initiative aligns closely with Ending Food Waste Australia’s vision by equipping consumers with the knowledge and skills needed to reduce avoidable food waste while supporting healthier, more sustainable diets. Funding will enable us to localise content for Australian households, expand our digital reach, and strengthen community engagement in food waste reduction.
